The sweet, spicy pickled ginger—also known as sushi gari—is marinated in water, salt, vinegar, and sugar. It is primarily served as a side dish with sashimi and sushi, as it neutralizes flavors. Kaneku ginger can also be used to season other Asian dishes, such as meat, fish, tofu, or vegetables.
